Sweet and Spicy Dipping Sauce

Use this as a dipping sauce for Asian Spring Rolls or add some to stir-fries, fried rice or cold rice noodles. The recipe yields about 1 cup.
Note: Thai peppers are tiny, profoundly hot peppers. Mash them with the garlic in a mortar and pestle, or use the flat of a knife--a blender doesn’t work as well. Beware the fiery juice on your fingers. Use less or more according to your family’s tastes.
Ingredients:
4 tablespoons sugar or 3 tablespoons honey
2 tablespoons lime juice
1 tablespoon bottled fish sauce (nam pla)
1-2 cloves garlic, mashed to a paste
2 or more Thai chilies (or other hot peppers), mashed into small bits
Instructions:
Boil sugar with 1 cup water for 2 minutes. Cool. Stir in remaining ingredients.
