Get ready for barbecue season! Beef from Organic Prairie, America's largest cooperative of organic family farmers, is now offered in select ShopRite stores.

Organic Prairie beef is available in seven varieties for summer grilling, including: premium New York strip steak, premium sirloin steak, premium boneless chuck roast, premium beef strips for fajita/stirfry and 1 pound packs of fresh ground beef in 85 percent and 90 percent lean varieties.

"We're proud to bring fresh and flavorful Organic Prairie beef to ShopRite customers," said Tedd Heilmann, Organic Prairie general manager. "Customers can enjoy a high quality difference they'll taste with our Angus-cross organic beef, and rest assured they're preparing safe and nutritious meat that's USDA certified organic."

Delicious and healthful meats come from animals raised according to the most strict organic production standards on family farms that cooperatively own the Organic Prairie brand.

"We adhere to the highest standards of animal well-being," Heilmann noted. "Our cattle are pasture-grazed with plenty of room to roam, fresh air and sunshine. Their feed is 100 percent certified organic, with no animal by-products."

The farmers who supply Organic Prairie were among the nation's first to produce meat without the use of antibiotics, synthetic hormones or pesticides. They insisted on third-party organic meat certification long before federal organic standards were established and were the first in the industry to ban animal by-products from their cattle's diet. Sharp Cheddar Stuffed Burgers

Makes: 4 servings

1 pound Organic Prairie Ground Beef
1/3 cup red onion (finely chopped)
1/4 cup fresh parsley (washed and minced)
2 teaspoons Worcestershire sauce
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1/2 cup Organic Valley Raw Sharp Cheddar Cheese

Prepare barbecue (medium-high heat). Combine meat, onion, parsley, Worcestershire sauce, salt and pepper in medium bowl; blend well.

Divide meat mixture into four equal portions. Shape each into ball. Poke deep hole in each ball and fill with cheese. Mold meat around cheese to enclose. Flatten each filled burger to 3/4-inch-thick patty.

Grill burgers to desired doneness, about five minutes per side for medium and seven minutes per side for well-done burgers.

Serving suggestions: Serve open-faced on sourdough bread with chopped lettuce, sliced tomato and your favorite condiments.

Nutrients per serving: 410 calories, 34g fat (71.3% calories from fat), 33g protein, 2g carbohydrate, trace dietary fiber, 139mg cholesterol, 419mg sodium.
