Apple Chutney

Ingredients:

2 medium limes
3 pounds apples (peeled, cored and diced)
2 large navel oranges (peeled and chopped)
1 jalapeno chile pepper (seeded and minced)
1/2 medium red onion (finely chopped)
1/4 cup cranberries (dried)
1/4 cup seedless raisins
1/2 cup brown sugar (packed)
1/4 cup apple cider vinegar
1 tablespoon crystallized ginger
2 tablespoons fresh ginger root (peeled and minced)
1/2 teaspoon sea salt

Instructions:

Prepare limes: grate 1 teaspoon peel and squeeze 2 tablespoons juice.

In a large heavy saucepan, heat lime peel, lime juice, and remaining ingredients to boiling over medium-high heat, stirring occasionally. Cook, uncovered, about 20 minutes or until thickened, stirring occasionally. Cover and refrigerate chutney until well-chilled, about 6 hours or up to 5 days.
