What is Gluten?
Gluten is the common name for proteins in certain cereal grains that are harmful to persons suffering from Celiac Disease. These proteins are found in all forms of wheat (including durum, semolina, spelt, kamut, einkorn, and faro), and related grains, rye, barley, and triticale and must be eliminated. Only gluten proteins from wheat, rye and barley are problems for gluten intolerant people.
What is Celiac Disease?
Celiac Disease is a lifelong autoimmune intestinal disorder, found in individuals who are genetically susceptible. Damage to the mucosal surface of the small intestine is caused by an immunologically toxic reaction to the ingestion of gluten and interferes with the absorption of nutrients. Celiac Disease is unique in that a specific food component, gluten, has been identified as the trigger.
How can gluten-free status be verified?
Organic Prairie provides full disclosure of additives in the ingredients list on all of our packaging. This is required because of the strict nature of organic certification—another reason why organic is the safest choice. In addition, Organic Prairie verifies that our packaging and packaging processes do not contain gluten from rye, barley or wheats. Some packaging does contain corn gluten. If you have questions about corn starch, feel free to contact us with specific questions.
